Ingredients
- Rice of your choosing1x cucumber1x carrot 1/2 avocado1x bunch of broccolini
- Dressing ingredients - 3tbsp Soy sauce, 1tbsp S&B wasabi, 1/2tbsp sesame oil and 1tbsp rice vinegar.Toppings - sesame seeds, fried shallots, Kewpie mayo, sriracha if desired.
- 200g sliced smoked trout
Method
- Cook rice according to packet instructions. Let it cool. Sauté broccolini on the stove with vegetable oil, dash of sesame oil and soy sauce. After 3-4 mins, splash water in the pan, cover quickly with a lid and let it steam for 2-3 mins. Season with salt and pepper to taste. Cut the broccolini into small pieces.
- Julienne the cucumber and carrot Slice the avocado however you likePrep the dressing - put all dressing ingredients in a jar and shake up. Make sure the wasabi is mixed in well. Put the cooled rice in each bowl Top with all the vegetables Pull apart the sliced trout and place however you prefer in each bowlPour dressing over (enough to your taste)
- Drizzle over kewpie mayo and sriracha if you prefer. You can also use chilli oil if you like. Sprinkle with sesame seeds and fried shallots.Serve immediately and enjoy!
