Ingredients
- 1 large Carrot sliced thinly
- 1/2 zucchini grated
- Broccoli cut into small pieces
- Pork steak sliced thinly
- Sesame oil
- 2 tb soy sauce
- 1/4 cup vegetable stock
- 2 tsp rice vinegar
- 2 tsp sriracha
- 1 tbs brown sugar
- 1 tbs minced garlic
Method
- Add all of the sauce ingredients in a jug and stir to combine (garlic, soy sauce, sriracha, brown sugar, rice vinegar and stock)Set aside
- In a saucepan, cook the soba noodles following the directions on the packet. Once cooked, drain and set aside.
- In a wok, heat the sesame oil then add the pork and cook on high until browned.
- Add the vegetables to the pan and cook on high heat until they begin to soften.
- Pour in half the sauce and stir to combine
- Add the cooked soba noodles and add the rest of the sauce. Stir well to combine Then divide between 4 bowls
