
Ingredients
- 2 tbsp vegetable oil (or other neutral oil)
- 1/2 a jar of Valcom Massaman Curry Paste
- 500g beef (beef chuck or any other cut suitable for slow cooking) - cut into 2cm cubes
- 400ml coconut milk
- 1 cup beef stock (or water)
- 1 tbsp tamarind paste
- 1/2 tbsp fish sauce
- 1/2 tbsp sugar (brown sugar preferred but white sugar can be used)
- 2 medium potatoes cut into quarters
- 1 carrot sliced 2cm thick
- 1 onion chopped into large chunks
- Garnishes of your choice (e.g. peanuts, crispy shallots, fresh chopped chillies, coriander or basil)
Method
- Heat the oil in a large pan (or casserole pot) and fry the Valcom Massaman Curry Paste on low heat until fragrant (around 1 minute).
- Turn the heat to medium, add the beef to the pan and cook until the beef begins to brown (around 3 minutes).
- Add the coconut milk, beef stock (or water), tamarind paste, fish sauce and sugar. Give the contents of the pan a good stir.
- Add the potatoes, carrot and onion.
- Cover the pan, turn the heat to low and let it simmer until the beef and potatoes are tender (around 1.5 hours).
- Uncover the pan and simmer for an extra 5 minutes to allow the curry to thicken a bit.
- Serve with rice and top with garnishes of your choice. Enjoy!
