Ingredients
- Obento Rice Wine Vinegar
- Fish Sauce
- 1 x hot chilli - sliced
- 1 garlic clove - diced
- 4 tablespoons of sugar
- 400g pork belly slices
- 2 x shallots - crushed and roughly chopped
- 2 handfuls of fancy lettuce
- 1 handful of mint
- 1 handful of coriander
- Half of a pineapple - sliced
- 1 Lebanese cucumber - sliced
- 2 x carrots - peeled and sliced
- 1 small pack of vermicelli noodles
- 1 pack of rice paper
- A clean tea towel
Method
- Pickle the sliced carrots ahead of time, up to a day in advance. Add 5 tablespoons of Obento Rice Wine Vinegar and 2 tablespoons of the sugar to a bowl and stir until dissolved, then add the carrots and refrigerate.
- Prepare the sauce by mixing 3 tablespoons of Obento Rice Wine Vinegar with 3 tablespoons of fish sauce. Add the garlic and half the chilli (leaving some for garnish and to include inside the rolls). Add the remaining sugar and stir until dissolved. Use a dash of water to dilute the sauce if needed.
- Prepare your fresh ingredients. Rinse the lettuce, mint and coriander. Remove the skin of the pineapple and slice. Slice the cucumber.
- Crush and roughly chop the shallot and add to a pot of seasoned boiling water. Add the pork belly slices and cook until it has an internal temperature of 60 degrees Celsius when measured by a thermometer (roughly 8 minutes boiling). Let the pork cool and then slice.
- Boil the vermicelli noodles in a pot with boiling water for around 6 minutes, or until al dente, then rinse with cold water, drain and place in a bowl.
- Add warm water to a large bowl so that it is half full. Wet a clean tea towel under the sink and wring out excess water then lay flat on a clean bench or table.
- Dip the rice paper sheets into the bowl of warm water and then lie flat on the damp tea towel (ensuring you don’t overlap any of the rice paper sheets).
- Once the rice paper sheets have been on the damp tea towel for a minute or so, they will soften and be ready to use. Pick one up gently (ensuring it doesn’t fold on itself) and add to your plate.
- Start building your spring roll. To do this: pick one corner to place all of your ingredients in a neat line (and ensure they are not spilling over the edge of the rice paper). Take the rice paper sheet under the ingredients and roll over (much like making sushi), then fold in the two ends to seal the roll, and then continue rolling until complete.
- Dip the spring roll in the spicy dipping sauce and enjoy!
