
Ingredients
- 1 tbsp crunchy chilli oil
- 1 tbsp Olive oil
- 1tbsp crushed garlic
- 1tbsp crushed ginger
- 2 tbsp lime juice
- 1 tbsp crushed lemon grass paste
- 1 tbsp fish sauce
- 1/2 Jar of Valcom Laksa Paste
- 1 ltr Chicken Stock
- 1 400ml can Coconut Milk
- 1 cup of water
- 1 270g packet Hakubaku organic Udon Noodles
- 2 fresh chicken breasts thinly sliced
- Optional garnishes: Fried shallots, bean shoots, fresh shallots or thinly sliced Chilli, fresh lime wedges
Method
- Heat Olive oil and Chilli oil in a large saucepan over medium low heat.Add garlic and ginger, sauté for 20 seconds, then add lemongrass. Cook for 1 minute.
- Add laksa paste. Turn heat up to medium and cook for 2 minutes, stirring constantly, or until fragrant.
- Add fish sauce, Lime, chicken stock and coconut milk. Place lid on and simmer on low for 10 minutes.
- Prepare Udon Noodles per packet directions and set aside.
- Add thinly sliced Chicken breast to the Laksa soup and simmer gently until cooked. Add Udon noodles and serve with garnishes of choice.
- Optional garnishes: Fresh lime wedges, fried shallots, bean sprouts, sliced fresh shallots, thinly sliced chilli
- Serving suggestion: Pork wontons or wontons of your choice are a great addition for a more hearty soup.
