Ingredients
- Dough ingredients: * 1 cup warm water * 2 tbsp sugar * 2 tsp dry yeast * ½ tsp salt * 1¾ cup flour
- Hotdog coating ingredients: * 1 large potato * 2 tbsp flour * 1/2 cup panko breadcrumbs * 1/2 cup popped rice cereal * 1/2 cup corn chips crushed * Oil for deepfrying * 500g mini hotdogs (Frankfurts) * Wooden sticks
- Condiment ingredients: * 1/2 cup Kewpie Mayo * Sriracha * Chilli powder seasoning * Mustard * Tomato sauce
Method
- Method for making the dough:* Add warm water, sugar and yeast in a bowl and mix well. * Add the flour and salt and mix well until there are no lumps. * Cover and let it rise for 1 hour.
- Method for preparing the coatings:* Peal and chop the potato into 0.5cm cubes. Bring a small pot of water to the boil and cook potato cubes briefly (approx 3 min). Drain well then return straight to the hot dry saucepan to dry out the potato. Or dry on paper towel. Dust with 2 tbsp flour and place in a flat plate. * Place breadcrumbs in a flat plate. * Crush corn chips and place in a flat plate. * Place puffed rice cereal in a flat plate.
- Method for coating and cooking the hot dogs:* Skewer the hotdogs lengthwise with wooden sticks (I used popsicle sticks). * Heat the oil (a couple of inches high in a wide and deep pot) to 180 C. * Roll the hotdog in the dough to coat the whole hotdog then coat with the topping of choice. * To make the potato coated hotdogs, roll the dough covered hotdog in the potato cubes then sprinkle with breadcrumbs and use hands to make sure potato is well stuck to the dough. * Put straight into the hot oil and cook until golden 6-7 minutes. * Remove and drain excess oil over mesh and let cool briefly before serving. * To make the hotdogs with other coatings, roll the hot dog with dough then roll with either the crushed corn chips or puffed rice cereal. Cook until golden (these may take less time than the potato coating). * Remove and drain excess oil over mesh and let cool briefly before serving.
- Preparing the condiments:* To make the spicy mayonnaise, add the sriracha (2-3 tsp or more if you like it spicy) with the kewpie mayonnaise and mix together. * Sauces (sriracha, tomato sauce, mustard, mayonaise) can be either drizzled on the hotdogs directly from the bottle or put in a container for dipping. If you want some extra spice you can also sprinkle with chilli powder seasoning. * The hotdogs are best enjoyed freshly cooked and still hot and crunchy.
