Ingredients
- Chilled soba
- Bunch of green herbs (coriander, mint, spring onion)
- Pre cooked BBQ Chicken
- Handful of cashews
- 1 long red chilli
- 1 carrot julliened
- 1 cucumber julienned
- 4cm ginger finely sliced
- 1 tsp sesame oil
- 1 tbsp extra virgin olive oil
- 1/2 tsp chilli flakes
- 2 tsp soy sauce
- Juice of 1 lime
- 1 tsp brown sugar
- 2 teaspoons fish sauce
Method
- Cook and chill soba according to packet. Drain and put aside
- Julienne carrot, cucumber and ginger
- Toast cashews on fry pan
- Chop green herbs finely reserving the whites
- Fry whites of spring onions until crispy
- Pull apart chicken into bite sized pieces
- Combine dressing olive oil, sesame oil, soy sauce, fish sauce, lime juice, brown sugar and ginger.
- Toss all ingredients in dressing
- Refrigerate 10-15 minutes and serve and enjoy!
