Ingredients
- 6 cloves garlic
- 6cm pice ginger finely chopped
- 750g pork mince
- 3/4 cup mirin
- 6tbsp soy sauce
- 160g red miso paste
- 3tbsp gotchujang chili paste (or equivalent)
- 2ltrs chicken stock
- 6 eggs soft boiled
- 540g hakubaku organic ramen noodles
- 3 bok choy, halved
- 3 Spring onions, finely sliced
- 3 tbsp toasted sesame seeds
- 2 tbsp peanut oil
Method
- Heat oil in fry pan. Sauté ginger and garlic for 2-3 minutes. Add mince, cooking until browned.
- Combine mirin, soy, miso and Gotchujang. Add to pork and cook for a further 2 minutes.
- Place stock in a separate pot and bring to a simmer.
- Bring water to boil and cook noodles for 4 minutes, adding the bok choy in the last 30 seconds
- Drain noodles and bok choy, and divide between bowls. Pour over hot stock. Top with mince, shallots, and sesame seeds. Finally add soft boiled egg cut in half.
- Serve and enjoy
