Ingredients
- 1/2 cup Obento Mirin
- 1/2 cup sweet chilli sauce
- 1 tsp minced garlic
- 1/2 cup honey
- 1 tsp salt/pepper
- 10 chicken wings
- 1 tsp finely chopped ginger
- 1 tbs soy sauce
- 2 cups uncooked sushi rice
- 2 cups water
- 1/2 cup Obento rice vinegar
- 1 tbs vegetable oil
- 1/2 cup white sugar
- 1 tsp salt
- Shichimi togarashi red pepper mix
- 2 tbs Kewpie mayo
- 1 tsp black sesame seeds
- Nori komi furikake rice seasoning
- Sushi pickled ginger
- Vegetables of choice - lettuce, cucumber, carrot, cherry tomatoes, red onion, spring onion, lemon wedges
- Kewpie roasted sesame salad dressing
- Brown sugar
Method
- Marinate the chicken wings overnight in the mirin, honey, brown sugar, sweet chilli sauce, garlic, ginger, soy sauce and salt/pepper
- Line a tray with greaseproof paper. Bake the chicken wings for 30 mins at 180oC in a fan forced oven.
- Meanwhile, cook the sushi rice with the water in a rice cooker.
- At the same time make the sushi vinegar by boiling the rice vinegar, sugar, salt and oil in a pot until the sugar dissolves.
- Once the rice is cooked, stir through the sushi vinegar and keep it warm in the rice cooker.
- Make the side salad with the vegetables.
- Serve the chicken wings with the sushi rice and salad. Top the sushi rice with the nori komi furikake rice seasoning. Drizzle the roasted sesame dressing on the salad. Put a dollop of kewpie mayo on the side, sprinkled with the spicy shichimi togarashi. Lastly, add a spoonful of pickled ginger and enjoy! おいしい です!!
