Ingredients
- 2 large brown onions
- 4 large carrots
- 2 red capsicum
- Medium head of broccoli
- 250g bean shoots
- 650g chicken breast
- 2 litre container of spinach
- 1 dessert spoon minced garlic
- 1 dessert spoon crushed ginger
- 8 cubes of S&P Golden Curry Medium Hot
- 50/50 brown/white Australian medium grain rice
Method
- Peel and dice vegetables.Dice chicken
- 3 cups of Rice into microwave rice cooker. 20 minutes
- Generous Splash olive oil in large frying pan. Temperature 5. Stir fry chicken for few minutes. Add garlic and ginger.
- Add veggies, bean shoots and spinach last. Cook until ready, serve and enjoy.We usually eat it 3 nights in a row and freeze the 4th 2 serves for a busy day. Simple, healthy meal for simple people.
