Ingredients
- 2 cups Sushi rice
 - 1/4 cup rice wine vinegar
 - 1 tbs caster sugar
 - 1tsp salt
 - 2 cans red salmon
 - 250g cream cheese
 - 1/4 cup KEWPIE siracha mayonnaise plus extra for drizzling
 - 1 avocado
 - Nori sheets for garnish
 - ABC Kecap Manis for drizzling
 - Finely sliced shallots for garnish
 
Method
- Rinse rice and place in saucepan with 3 cups of water. Boil and reduce heat then cook until water is absorbed. Add vinegar, sugar and salt. Set aside.
 - Drain salmon into a bowl and flake. Add cream cheese and Siracha mayonnaise. Mix thoroughly.
 - Slice avocado thinly and set aside.
 - Grease an ovenproof dish and scoop the rice into the dish. Press down into the dish.
 - Spread the salmon mixture on top of the rice.
 - Bake for 20 mins.
 - Place avocado on top.
 - Drizzle with extra Siracha and Kecap Manis.
