Ingredients
- Sushi rice
- Mayo
- Canned Tuna
- Cucumber
- Marinated Honey soy chicken
- Omelette
- Sushi rice seasoning
- XO SAUCE
- Spring onion
- Nori sheets
- Pickled ginger
- Soy sauce
Method
- Cook sushi rice according to packet instructions, leave to cool and add 3 TSP of sushi rice seasoning, mix well
- While rice is cooking, cook the pre-marinated chicken and leave to cool
- In a bowl mix together eggs with half a teaspoon of XO sauce. Heat up a frying pan and add a little oil, once hot, pour in the egg mixture, turn heat down to medium and cook omelette until set, put aside to cool
- Mix the canned tuna with 2 tbsps mayo, salt and pepper and sliced spring onions and
- Slice up the omelette into strips, and dice the chicken in to small pieces
- Lay down a sheet of Nori on a sushi rolling mat, cover half with the rice pressing in to a rectangle shape. Take your filling choice, about a small handfull and evenly spread over the rice
- Use the mat to roll up the sushi, and seal the end with water. Slice into desired rounds and arrange on a plate
- Repeat process with all chosen fillings. Once completed serve with pickled ginger and soy sauce, enjoy!!
