Ingredients
- 100g fried tofu puff
- A (Aromatics):
- 1 clove garlic
- 3 medium red shallot
- 3 bird’s eye chilies
- B (Sauce):
- 150ml water
- 1tbsp ABC sweet soy sauce
- 55g palm sugar
- 7g white sugar
- 1 tsp mushroom powder
- 1 tbsp tamarind paste
- Garnish:
- Red shallot thiny slices and cut chillies
Method
- Prepare the tofu:Place the fried puff tofu in an air fryer at 120°C for 5 minutes.Transfer to a serving bowl and set aside
- Prepare the sauce:In a pot, add 150ml water, palm sugar, white sugar, mushroom powder, ABC Sweet soy sauce, and tamarind paste.Heat over medium heat until water comes to boil.Stir occasionally until all the sugar dissolves
- Prepare the aromatics:While waiting for the sauce to boil, roughly crush the garlic, onions, and chilies using a mortar and pestle
- Combine the flavors:Once the sauce is boiling, add the crushed aromatics (A ingredients) into the pan.Stir and let it simmer for 1–2 minutes to infuse the flavors.
- Assemble:Cut the tofu in half diagonally to form two pyramid-shaped pieces and put it into the serving bowl.Pour the hot sauce over the fried puff tofu in the serving bowl
- Serving:Garnish with extra sliced red onions and chilies.Serve immediately and enjoy the wonderful bowl that is also fast and fab, soul spicy and meat free!Ps. If you like spicy food, add more chillies to suit your heat level
