Ingredients
- 1cup gluten free flour
- 1/2 Tsp Baking powder
- 3 eggs
- 3/4 cup vegetable stock
- 3 cups of shredded wombok
- 150g peeled and grated sweet potato
- 3 tbsp vegetable oil
- toasted sesame seeds
- pinch of salt
- 1 tbsp Soy Sauce
Method
- In a large bowl whisk together the flour, baking powder and salt. Add the eggs and stock and soy sauce and beat till combined. Stir in the Cabbage and sweet potato
- In a frypan heat the oil over medium heat. Ladle the batter into the pan in the form of a pancake. Cook on either side for 3-4 minutes. Transfer pancake to pate lined with paper towel.
- To serve drizzle pancakes with Tonkatsu sauce and Kewpie Mayonnaise, sprinkle with sesame seeds.
