
Ingredients
- 1 fresh squid, cleaned, tentacles included
- 200g fresh prawn
- 1 cup rice
- 1-2 limes, 30 mls juice and one half segmented
- 1 avocado
- Coriander
- 1 bulb roastedGarlic
- 1tbsp powdered ginger
- 2 large spring onions
- 1 tbsp honey
- 3 tbsp soy
- 3 tbsp roasted peanuts, roughly chopped
- 2 tbsp toasted sesame seeds
- Kewpie mayonnaise
- 2 fresh green chilli’s, seeds removed
Method
- Cook the rice and while waiting finely chop the spring onions. Once cooked, stir through spring onions and soy
- Prepare marinade for the seafood by mincing roasted garlic with a fork before adding honey, ginger and finely chopped chilli’s. Prepare the seafood by peeling and de-veining the prawns, leaving tails on.Score the squid at a diagonal along both sides of the tube before cutting into rings. Roughly chop tentacles to bite size pieces In a bowl mix together all prepared seafood and marinade for 30 minutes (or overnight if able to prepare in advance).
- Prepare salsa by dicing up segmented lime, 1 handful of coriander finely chopped, avocado, lime juice, 1 tbsp honey and salt and pepper to taste
- Heat pan with drizzle of olive oil and add marinated prawns, turning one or twice until colour changes and flesh is cooked. Removed from pan and add in squid, tossing pan frequently until some char colour on squid (~3 -4 minutes). Return prawns to pan and toss for 30-60 seconds until everything is hot and well coated in marinate.
- Plate up by adding some rice, generous serving of seafood and topping with salsa, roasted peanuts and sesame, and finally some Kewpie. Enjoy!
