Ingredients
- Firm tofu 1 block
- Potatoes 6 chopped
- 1 zucchini chopped
- 5 kaffir leaves
- 1 tsp fish sauce
- 1 tsp brown sugar
- 2/3 cup frozen baby peas
- Can coconut cream
- Chopped garlic
- Coconut oil 2 tbsp
- Green curry paste 1/2 jar
Method
- Melt coconut oil in large pan and fry garlic and green curry paste for 1 minute.
- Add chopped potato’s and stir till coated
- Pour can of coconut cream in
- Add chopped zucchini and cover form tofu. And kaffir leaves and simmer still veggies are semi firm
- Add frozen peas and simmer till potatoes are cooked through
- Serve with corriander and jasmine rice
