Ingredients
- Tofu (drain water & press for 1hr)
- 4 carrots
- 3 onions
- 3-4 potatoes
- Frozen peas, corn and carrot
- S&B curry box x 2
- Rice or noodles to preference
Method
- Drain and press tofu for 1-2hrs
- Cut up tofu to desired size & quick sear of tofu in pan
- Cut up onion and add to pan, cook over low heat until translucent.
- Add tofu and onion to pot, cut carrot and potatoes into large cubes and add to pot. Add water until water level is level with ingredients and bring to a simmer. Simmer for about 10 minutes.
- Add curry to pot and stir through, simmer until vegetables are cooked through and sauce takes on a golden colour and thickens to preference.
- Add frozen peas, corn and carrots and stir through until cooked.
- serve with rice or noodles as preference
