Ingredients
- 2 tbsp Obento Teriyaki marinade
- 300g (1 large) chicken breast
- 1 cup sushi rice
- 3 tbsp Obento rice wine vinegar
- 1 tbsp castor sugar
- 1/2 tsp salt
- 1/2 cucumber
- 3 sheets of Obento Yaki nori for sushi
Method
- Cut chicken breast into long thin strips and marinade in the fridge Obento teriyaki marinade for 3 hours +
- Add 1 1/2 cups of water to 1 cup of sushi rice and bring to the boil and then simmer, covered for 15 minutes. Then let the rice cool for 10 minutes.
- Mix Obento rice wine vinegar, sugar and salt in a jar.
- While rice is cooking, pan fry chicken strips and cut cucumber into long strips.
- Lay out 3 Obento yaki nori sheets and spread rice all over each, leaving 2 a cm strip at the end of the paper.
- Layer chicken strips and cucumber strips across each rice covered sheet and then tightly roll using a sushi mat. Dab water along the end of the sheet to form a seal.
- Cut to desired length and serve with soy sauce and wasabi.
- Eat. Enjoy. Rest.
