Ingredients
- 1 cup medium white rice
- 2tbs premium soy sauce
- 1tbs white wine vinegar
- 1tbs pure honey
- 1 garlic clove, crushed
- 500g chicken breast fillets
- 5ml olive oil cooking spray
- 1 avocado
- 200g endamame salad
- 1 carrot peeled into ribbons
- 1 Lebanese cucumber sliced
- 1/4 lettuce chopped
- 4 sheets nori, halved
- 1tsp sesame seeds
Method
- Cook rice according to packet instructions
- Meanwhile, combine soy sauce, white wine vinegar, honey and garlic in a shallow bowl. Slice chicken and coat.
- Spray a large non-stick frying pan with olive oil and heat over medium heat. Cook chicken until browned and cooked through.
- Arrange rice, avocado, endamame, carrot, cucumber, lettuce, chicken, and nori in bowls. Serve sprinkled with sesame seeds
