Ingredients
- 600g chicken thigh cubed
- 400 ml coconut milk
- 1 tbsp curry powder
- 1 tablespoon white sugar
- 3/4 of a cup natural unsweetened peanut butter
- 3 tablespoons red curry paste
- 1/4 of a cup of white sugar
- 2 tablespoons dark, soy sauce
- 1 teaspoon salt
- 2 tablespoons apple cider vinegar
- Half a cup of water
- To serve lime wedges, fried rice, cucumber
Method
- Marinate chicken mixed chicken with one quarter of a cup coconut milk, 1 tablespoon curry powder, 1 teaspoon white sugar, 2 teaspoons red curry paste, 1 teaspoon and cooking salt
- Peanut sauce place, coconut milk,, peanut butter, curry paste, white sugar quarter cup dark, soy sauce, apple cider, vinegar and water. Bring to a simmer and let thicken.
- Prepare skewers with marinaded chicken then sear till golden and cooked through.
- To serve, place peanut sauce in bowl. With skewers on the plate. Dip into sauce.
