Ingredients
- 6 tbsp Thai Green Curry Paste
- 2 tbsp vegetable oil
- 1 cup chicken stock
- 1 tsp fish sauce
- 1 tsp sugar
- 400mL coconut milk
- 6 kaffir lime leave
- 350 stir fry beef
- 1 cup green beans
- 225g can bamboo shoots
- 16 Thai basil leaves
- Juice of half a lime
Method
- Heat oil in a heavy based skillet or pot over medium high heat.
- Add curry paste and cook for 2 to 3 minutes until it mostly dries out.
- Add chicken stock and coconut milk, mix to dissolve paste.
- Add 1 tsp fish sauce, 1 tsp sugar. Add kaffir lime leaves. Mix then bring to simmer.
- Add beef, stir then lower heat to medium so it’s bubbling gently. Cook for 5 mins.
- Add snow peas, cook 2 minutes until a bit softened. Add bamboo shoots, then stir through basil and lime juice.
- Serve over jasmine rice and enjoy!
