Ingredients
- 4 salmon pieces with skin
- 4 TSP of butter
- 1.5 tbsp of Thai red curry paste
- 200g coconut milk
- 1 tbsp of chopped coriander
- Salt to taste
Method
- Preheat oven to 200
- In an ovenproof dish place 4 salmon fillets with skin side up
- Mix Thai Red Curry paste with coconut milk
- Place 1 tsp of butter on top of each piece of salmon and crack some salt on top
- Pour over red curry sauce and sprinkle with chopped coriander
- Place in oven for 20 minutes or until salmon has cooked through
- Cook Obap Sweet Potato Noodles for 8 minutes on boil in a pot of water then drain
- Serve Thai Red Curry Salmon on top of Obap Sweet Potato Noodles and sprinkle with extra coriander
