Ingredients
- 2 x Diced chicken breasts
- 2 x carrots
- Green beans
- 2 x bunches of bok choy chopped
- 2 x tbsp Valcom Thai Red Curry Paste
- 2 x tbsp fish sauce
- 2 x tbsp brown sugar
- 1 x tbsp oyster sauce
- 2 x tbsp vegetable oil
- Rice to serve
- 1 x sliced small brown onion
Method
- Brown chicken in a wok with oil
- Remove chicken and add onion, carrots, green beans. Cook for 5 minutes until carrots are cooked but not too soft
- Add curry paste and cook for 2 minutes
- Add chicken back into pan and stir to combine
- Add bok choy and stir
- Season by adding fish sauce, brown sugar and oyster sauce. Adjust to your liking.
- Serve with rice and enjoy!
