Ingredients
- 4 Tbs vegetable oil
- 1 brown onion dice
- 1 precooked peking style duck breast
- 2 cloves of garlic minced
- 2 cups of cooked day old rice
- 2 Tbs Soy Sauce
- 2 Tbs Squid Brand Fish Sauce
- 1 tsp White Pepper
- One spring onion thinly sliced
- Half tomato diced
- Lime wedge to serve
- Sliced tomato and cucumber to serve
Method
- In a large pan add 2 tablespoons of vegetable oil and brown off onion until just soft. Put aside in a small bowl.
- Dice cooked duck breast and fry in the same pan until fat rendered. Put aside in a small bowl.
- Add 2 tablespoons of vegetable oil to the same pan, fry garlic for a couple of minutes, add cooked rice, cooked duck, and cooked onion and stir to combine.
- Add soy sauce and Squid Brand Fish Sauce and white pepper. Stir through
- Remove from heat and add spring onion and chopped tomato to the pan and stir through.
- And you are done!! Serve in a bowl with lime wedge and sliced tomato and cucumber, with chilli sauce if you like it hotter. Enjoy!!
