Ingredients
- 1/2 cup roasted cashews
- 1tbs peanut oil
- 500g lean ground beef
- 1 small onion (chopped)
- 2 garlic cloves chopped
- 4 tbsp chopped coriander
- 5 tbsp sweet chili sauce
- 4 tbsp fish sauce
- 2 tbsp Obento rice wine vinegar
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 clove of garlic minced
- Juice of one lime
- 1 Lebanese cucumber, peeled, deseeded and chopped
- 1 red chilli finely sliced
- Steamed Jasmin rice
Method
- Toast cachews and roughly chop. Mix 2 tbsp sweet chilli sauce with 2tbsp fish sauce, rice vinegar, oyster and soy sauce to make stir fry sauce. Mix minced garlic, 3 tbsp sweet chilli sauce, lime juice and remaining sauce to make drizzle sauce.
- Fry onions and chopped garlic with oul in a hot wok for 1 min. Add beef and fry until no longer pink. Add the stir fry sauce and fry until dry and caramalized (about 5 mins).
- Divide rice between four bowls, top with caramalized beef, coriander, cucumber, chilli and chopped cashews. Drizzle with drizzle sauce and finish with a squeeze of lime juice.
