
Ingredients
- 200g Extra Firm Tofu200g Soba Noodles
- 1 tbsp grated fresh ginger 1 tbsp crushed fresh garlic2 tbsp gluten free soy sauce1 medium English cucumber finely sliced
- Dressing Juice of large lime1 tbsp gluten free soy sauce1 tbsp rice vinegar 1 tbsp toasted sesame oil Chilli flakes
Method
- Drain and squeeze tofu of water, wrap in paper towel to get rid of excess.Crumble the tofu into small pieces with handsHeat a pan with light oil for frying add crumbles and a pinch of salt.Fry for 6-7 minutes until the tofu turns goldenAdd the soy sauce and let absorb, add a little more oil, add the garlic and ginger and fry for 3-4 minutes.
- Cook the soba noodles according to packet add some sesame oil to prevent sticking and the. drain water.Steam some broccolini stems Toss all the ingredients in a bowl and mix together.Divide into bowls and serve. Add some chilli and lime wedges for serving.
