Tofu Sushi Bowl

Ingredients
- 300g Tofu
- 1 cup Sushi rice
- 1 Avocado
- 2 carrots
- 1 cup Edamame
- 1 Cucumber
- Spinach
- 2 Nori sheets
- Kewpie mayo
- Soy sauce
- Chilli
- Sesame seeds

Method
- Cook 1 cup sushi rice as per packet instructions
- Chop up tofu, cucumber, avocado and grate the carrot. Pan fry tofu until golden brown. Heat up edamame in microwave.
- Once the rice is cooked, drained and divide between bowls. Add in your spinach, carrot, cucumber, avocado, tofu and edamame.
- Top with nori and drizzle with your desired amount of chilli, soy sauce and kewpie mayo.
