Ingredients
- 2L water
- 4 stalks lemongrass
- 1 inch galangal
- 10 kaffir lime leaves
- 10 chillies
- 5 cloves garlic
- 200 grams button mushrooms
- 8 tbsp lime juice
- 1 tsp palm sugar
- 2 white onions
- 2 tomatoes
- Handful coriander
- 8 tbsp fish sauce
- 1/2 kg prawns
Method
- Put water, lemon grass, galangal, kaffir lime leaves, chillies, garlic, mushrooms in a pot to boil for 30 minutes
- Add onions, tomatoes, fish sauce and lime juice and boil for another 5-10 minutes
- Add prawns and boil for another 5 minutes and skim off excess red froth
- Add coriander and serve
