Ingredients
- 250g packet of brown rice
- 1/2 lebanese cucumber
- 1/2 carrot
- 20g spinach
- 50g cherry tomato
- 100g tuna chunks in springwater
- 1 tbsp Kewpie roasted sesame dressing
- 2 tbsp Kewpie mayonnaise
- Roasted seaweed (to serve)
- Roasted sesame seeds (to serve)
Method
- Cook the rice following packet directions. Set aside to cool. Transfer the rice to a serving bowl.
- Cut the cucumber into thin batons. Cut the carrot into long matchsticks. Cut the cherry tomatoes in half.
- Drain the tuna and mix with 1 tbsp Kewpie mayonnaise.
- Arrange the tuna, carrot, cucumber, spinach and cherry tomatoes in the bowl of rice.
- Drizzle with the dressing and mayonnaise and sprinkle with sesame seeds and roasted seaweed.
