Ingredients
- Tinned Tuna in Brine
- Kewpie Mayonnaise
- 1 small red onion
- Nori Sushi Sheets
- Avocado
- Cucumber
- Whole egg mayonnaise
- Vinegar
- Caster sugar
- Salt
- Pickled Ginger
- Sushi rice
- Soy sauce
Method
- Wash your sushi rice until the water runs clear and place in rice cooker until cooked. Once cooked let it sit for 15 minutes on “warm” mode then remove and let cook for 10 minutes
- Mix sushi rice with 3 table spoons of vinegar, half a teaspoon of caster sugar and half a teaspoon of salt
- Finely chop red onion, slice cucumbers in to quarters keeping the length, and drain, slice your avocado and drain your tuna
- In a bow mix your drained Tuna, add 3 table spoons of whole egg mayonnaise and 1 tablespoon of kewpie mayonnaise a dash of soy sauce and your finely chopped red onion and mix until a nice mashed consistency
- Lay your sushi rice flat on your nori sheet, then place your avocado slices, 1 long cucumber quarter and your tuna filling in whatever order and roll your sushi
- Once rolled slice an serve with wasabi, pickled ginger, extra mayonnaise and soy sauce
