Ingredients
- 2 pcs. egg whites, large
- ¼ tsp. lemon juice
- 50 grams caster sugar
- 2 pcs. egg yolks, large
- 25 grams caster sugar
- 20 grams ube powder
- 85 ml Valcom premium coconut milk
- 25 ml canola oil
- ¼ tsp. ube flavour
- ½ tsp. vanilla extract
- 60 grams self raising flour (cake, sponge & steamed bun type)
- ¼ tsp. baking powder
- 200 ml thick cream
- 2 tbsp. icing sugar
- ¼ tsp. ube flavour
- 2 tbsp. macapuno string (optional garnish)
Method
- Preheat oven to 175 °C. Grease and line a baking pan (38cm x 27cm x 2.5cm) with parchment paper. Set aside.
- Separate the egg whites from the egg yolks into two large mixing bowls. Set the egg yolks aside.
- Using a mixer, beat the egg whites until frothy. Add the lemon juice and beat until soft peaks form. Gradually add the 50 grams caster sugar, beating on high speed until stiff peaks form. Set the meringue aside.
- In the bowl with egg yolks, add 25 grams caster sugar, ube powder, Valcom premium coconut milk, canola oil, ube flavour and vanilla extract. Using a mixer, combine until smooth. Add the sifted self raising flour and baking powder, whisking until just combined.
- Gently fold the meringue into the batter until well blended and light. Pour the ube batter into the prepared baking pan and spread evenly. Bake for 10-12 minutes at 175 °C, or until the cake springs back.
- Remove the cake from the oven, let it cool for 5 minutes. Invert the cake onto a new parchment paper. Carefully peel off the parchment paper from the cake.
- Roll the cake with the parchment paper until log shape, let it cool completely.
- In a separate bowl, add thick cream, icing sugar and ube flavour. Using a mixer, beat until thick and fluffy. Set aside.
- Unroll the cooled cake, spread the ube frosting evenly. Carefully roll it up jelly-roll style. Transfer to a rectangular serving platter. Spread the remaining ube frosting all over the cake and decorate. Refrigerate for 2 hours or until chilled and set.
- Add macapuno strips as optional garnish. Slice the ube cake roll before serving. Enjoy!
