Ingredients
- Udon noodles
- Lettuce
- Cucumber
- Coriander
- Spring onions
- Garlic
- Peanuts
- Eggs
- Olive oil
- Lemon juice
- Fish sauce
- Sugar
Method
- Make salad of lettuce, cucumber, coriander and spring onion
- Hard boil 4 eggs
- Chop peanuts
- Slice 6 cloves garlic
- Heat 1/2 cup olive oil with garlic cloves until toasted
- Take oil off heat, add 1 tsp sugar, 2 tbsp lemon juice and 4 tbsp fish sauce
- Cook udon noodles
- Put noodles into a bowl, top with salad, chopped nuts, dressing and an egg
