Ingredients
- 1 tablespoon olive oil
- 2 large spoons of red curry paste
- Half a red capsicum
- 1 cup of fresh or Frozen mixed vegetables
- 165ml of premium coconut milk
- 165ml of soy milk
- 1 cup vegetable stock
- Half a bunch of coriander
- 1 300g block of form tofu
Method
- Heat oil in fry pan
- Add red curry paste and cook until fragrant
- Add coconut milk, soy milk (rinse out empty tin) and vegetable stock and bring up to boil
- Add tofu, capsicum and frozen vegetables
- Cook until vegetables cooked about 10mins
- Add chopped coriander
- Serve with rice or quinoa if you wish
