Ingredients
- 1 tbsp neutral oil
- 1 pack (320g) Fry’s Soy and Flaxseed Schnitzels
- 1 pack (92g) S&B Golden Curry Mix
- 700ml water
- 175g mushrooms
- 175g potato
- 175g onion
- 175g carrots
- 175g green peas
- 175g zucchini
- Rice, to serve
- Furikake seasoning, to serve
Method
- Slice mushrooms and dice potato, carrot, zucchini and onion into small, 1-2cm pieces.
- In a wok or large skillet, add oil and stir-fry mushrooms, potato, carrot, zucchini, onion and peas on medium-high heat for approximately 5 minutes. Boil water.
- Add water and bring to a boil. Reduce heat, cover and simmer until ingredients are tender, approximately 15 minutes.
- Meanwhile, cook schnitzels according to packet directions in an oven (approximately 220 degrees C for 16 minutes) and cook rice.
- Turn the heat off, break S&B Golden Curry Mix into pieces and add to the skillet. Stir until completely melted.
- Serve over hot rice with schnitzel sliced and arranged on top. Recipe makes 4 generous serves (with 4 schnitzels). Garnish generously with Furikake seasoning. Enjoy!
