Ingredients
- 400g Wide flat noodles
- Meat of your choice (Recommended Chicken)
- 2 Long sliced carrots
- 4 Broccolini Bunches
- 1 Capsicum
- 2 Tsp olive oil
- White pepper
- Black Pepper
- 3 tbsp ABC kecap Manis
- 3 tbsp Oyster Sauce
- 3 tsp Squid Brand Fish sauce
- 2 Large Eggs
Method
- First soak the noodles or cook according to their packaging. Drain the noodles and set them aside. Prepare the chicken or choice of meat by cutting into small long chunks and setting aside in a bowl. Optional season with a crack of black pepper. Prepare Broccolini, carrot and capsicum (or your choice of vegetables) by slicing into long strips set aside in a bowl. Lightly beat the two eggs in a bowl.
- Prepare the sauce by combining The Kecap Manis, the oyster sauce, fish sauce and finally add a dash of white pepper to taste.
- Using a large deep pan or a wok add half of the olive oil into the pan (make sure it’s a big pan it’s a lot of food!) Let the oil and pan heat up before beginning, test with one piece of chicken if it’s sizzling. Cook the chicken in batches by not having too much at once until it’s almost cooked through. Set aside chicken.
- Add the chopped vegetables into the pan, quickly flipping and turning them around. Once the vegetables start to become soft and shrink, set them aside. Add half a tsp of oil into the pan and let it heat up before adding the egg. Make sure to be quick and scramble it quickly. At this stage i like to add just a drop of the pre-made sauce to the egg.
- Once the egg is cooked add the noodles into the pan and toss it with the egg. Allow for a bit of searing on the noodles for extra flavour. Now add the Chicken and vegetables back into the pan as well as the Sauce. Toss it all together, and spread it out across the pan and the sides to allow it to cook further for about 30 seconds then toss again. Repeat about 2 times.
- And tada! Should be a delicious hearty meal full of protein and vegetables that probably needed to be gone! I find this Pad See Ew recipe great for meal prepping.
