
Ingredients
- Thai curry paste
- Vegetable oil
- Vegetable of your choice - carrot, zucchini, bak Chou, broccolini, bamboo shoots, chestnuts, broccolini, mushrooms
- Coconut cream
- Spices - chilli and lime leaves
- 3/4 water
Method
- Heat 2 tablespoons of vegetable oil over medium heat
- Add 1/4 cup Thai vegetable curry paste. Stir for 1 minute or until fragnant
- Add cream and water and bring to simmer
- Add vegetables and spices and cook on simmer for 8-10 minutes
- Serve hot with rice
