Ingredients
- Desired Veggies
- Tofu
- 1 jar of Green Curry Paste
- 2 cans of Coconut milk
- Garlic, Ginger, lemon grass, vegetable stock
- Rice
Method
- Bake any of the harder vegetables like pumpkin, potato, carrot
- While baking, put on a pot of rice, and separately saute the curry paste with the garlic, ginger, lemon grass, and then add the coconut milk and vegetable stock
- Add the non hard vegetables, like bamboo shoots, zucchini and beans as well as the tofu and let simmer
- Add the baked vegetables, stir through and serve
