Ingredients
- 550g thick rice noodles
- 3 tbs vegetable oil
- 1 carrot, peeled and chopped to matchsticks
- 4 eggs beaten
- 1 tsp fish oil
- 200g firm tofu
- 2 bunches spring onion, chopped diagonally
- 8 lime wedges to serve
- 2 bunches coriander, chopped
- 1 jar Valcom Pad Thai paste
Method
- Prepare rice noodles as per packet instructions and set aside
- Heat oil in pan and fry tofu for 5 mins until golden brown
- Add carrots to the pan, frying until softened
- Add spring onions, pad Thai paste and fish oil
- Turn off the fire. Add rice noodles and mix everything together until the rice noodles are covered in the paste, vegetables and tofu mix.
- Transfer to a large serving bowl and scatter coriander over the top. Garnish with lime wedges and serve!
