Ingredients
- 1 Tbsp peanut oil
- 1 onion, minced
- 1 tsp minced garlic
- 1 tsp minced ginger
- Valcom Authentic Thai Yellow Curry Paste as directed
- 400g chicken thighs, diced
- 1 mango, minced/ finely chopped
- 1 165ml can Valcom Premium Coconut Milk
- 1-2 Tbsp cashews, chopped for serving
Method
- Heat oil in a casserole dish and cook onion for 5 minutes till brown
- Add garlic, ginger and curry paste and dry for 1-2 minutes
- Add chicken and fry for 10 minutes till lightly golden
- Add mango and coconut milk and simmer for 15 minutes
- Serve with sprinkled cashews
