
Ingredients
- S and B golden curry, mild
- 500g of lean mince
- 1 medium onion
- 1 cup of rice
- Soy sauce
- Broccoli crown
- Two small potatoes
- Celery stick, two if small , finely chopped
Method
- Fry the onion in a tablespoon of butter, when clear add the 500g of lean mince to pan and brown. At the same time put one cup of rice in a saucepan cover it with water and set aside.
- Add S&B mild curry, a tablespoon of soy sauce and two cups of water to the mince and bring to simmer.
- In a separate pan fry two cubed small potatoes in a teaspoon of butter. Once they begin to brown add the diced base of the broccoli stem.
- Add the browned potatoes and broccoli to the curry mix.
- Wash the rice until the water runs clear. Add water to the rice so that it's a centimetre above the surface and place on high, once the water is boiling reduce to simmer.
- Add the florets of the broccoli to the curry, if they are large chop in halves or quarters so they cook quickly. As the curry sauce starts to thicken add the chopped celery.
- At this point the water shouldn't be visible in the rice, this means it should be cooked. Taste a little if the grain is firm but not crunchy it's done.
- Place rice into bowl in one half of the yin yang shape. Then carefully spoon in the curry mixture to the other side.
