
Ingredients
- 1 block of classic firm tofu (deep fried chopped into pieces)
- 2 tsp sesame oil
- 2 cloves of garlic crushed
- 1 zucchini (diced into small pieces)
- 200 grams mushrooms (diced into small pieces)
- 3 shallots (chopped)
- A bunch of coriander to taste (chopped)
- 1 can of Valcom water chestnut slices (diced into small pieces)
- 2 tbsp of sweet soy sauce
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp vegeta
- salt to taste
- pepper to taste
- sesame seeds
- 16 lettuce leaves (whichever type you preferred)
- *Optional - crushed peanuts
Method
- Add the sesame oil to a fry pan and add the garlic. Slowly cook the garlic until light brown in colour. Add the zucchini and mushrooms and stir fry on low heat until the majority of the moisture has disappeared.
- Add the deep fried tofu into the fry pan again keep the heat on low. Add the Valcom water chestnut slices and continue to stir fry on low heat.
- Add in the sweet soya sauce, soya sauce and oyster sauce. The add the Vegeta, salt to taste and pepper.
- Turn the heat to high and continue to stir fry. Now add the shallots and coriander stir until fragrant (about 1 - 2 mins), then turn of the heat and let it sit for a min or two before serving.
- To serve: put a spoon full of the zen mixture into each lettuce cup then sprinkle with sesame seeds, more coriander and shallots.Optional: for a nutty spin on flavour - sprinkle crushed peanuts!
- Yield: Serves Four People. Makes approximately 16 - 20 Zen chow bow lettuce cups.
