Ingredients
- Valcom Thai Green Curry Paste
- 4 salmon fillets
- 2 cups uncooked rice
- 400mls coconut milk
- 250mls vegetable or chicken stock
- 1 small red onion sliced thinly
- 1 tbs fish sauce
- Vegetables of choice: I used 2 handfuls of baby spinach and 1 handful of snow peas, any variety can be used such as broccolini, eggplant, green beans, carrot
- Coriander for garnish
- Juice if one lime + extra wedges for garnish
- Black pepper
Method
- Pre heat oven to 190 degrees
- In a large baking dish combine jar of Valcom Thai Green Curry Paste, rice, coconut milk, stock, onion, fish sauce and lime juice, cover with foil and bake for 45 minutes. Halfway through give it a stir
- Pan fry salmon pieces for one minute flesh side up, I did this just for a bit of crust and colour (optional)
- Check rice add a touch of water if a bit dry, stir through spinach, add salmon fillets, snow peas, cover and bake for 15 minutes
- Garnish with coriander, black pepper and lime wedges ... DELICIOUS
